Washing your lettuce under the kitchen sink will not get rid of Cyclospora.
Bacteria like E. coli can sometimes be rinsed off the surface of a leaf if they haven't bound to the cellular structure. Cyclospora parasites produce microscopic, sticky outer shells called oocysts. These oocysts cling tightly to the rough surfaces, crevices, and folds of leaf lettuce, cilantro, basil, and fresh raspberries.
Standard chemical sanitizers used in produce processing plants don't reliably kill Cyclospora oocysts either. Chlorine rinses and triple-washed water baths might reduce surface dirt, but they leave the microscopic parasite intact and ready to infect whoever eats the salad bar mix.
So how does contaminated produce enter the supply chain in the first place?
Human waste.
Cyclospora only infects humans. It doesn't live in cattle or wild birds. When agricultural fields are irrigated with water contaminated by human sewage, or when field workers lack access to clean, fully equipped sanitation facilities during harvest, the parasite transfers onto the crop.
The parasite also has an unusual biological feature. When infected human waste first touches a plant, the parasite eggs aren't immediately infectious. Ask Your Doctor for a Specific Parasite Panel
